It’s so hard to put into words. I am deeply in love with food, not only its components and parings. No, I am obsessed with everything about food, where it comes from, who handles it, what the region and climate brings to food. I’m obsessed with restaurants and kitchens, waiters stations and cramped, compacted chefs offices.
I’m infatuated with busy services and preparations, from the most menial task to the most delicate. I’m obsessed with blood, sweat, a tears, hours, upon months, upon years of refinement and work. I need that fire of the burners, the hum of a good system, the shine of stainless steel tables.
I am obsessed with food but that simply isn’t enough.
